Just look at this dairy free dragon fruit ice cream – have you even seen such a pretty colourful dessert? This is no churn ice cream made with pili nuts, coconut milk and gently dried dragon fruit covered in vegan chocolate. That’s right. You only need a few ingredients. You will LOVE this frozen dairy free dessert recipe using dragon fruit, also known as pitaya. If you are looking for a fun, colourful ice cream flavour with a hint of chilli, this is for you!
Ingredients:
100g gently dried dragonfruit
70g chilli pili Nuts
50g pitted dates
400ml canned coconut milk (full fat)
400g vegan milk chocolate
Instructions:
Soak the dragonfruit and the dates in the coconut milk, in a container or smoothie cup. You can do this for at least an hour, but over-night is also fine. You just need the dried fruits to soften enough. When ready, blend everything until creamy and smooth. Pour the mixture into a container with parchment paper lined (I’ve used a baking tray, but it can be any container suitable for the amount of ice-cream we are making.) Freeze for at least 3 hours or better until fully frozen. When ready, take out from the freezer. You should have a solid block of frozen cream ready to be cut into pieces to be further coated in melted chocolate. Melt the chocolate using water bath method. Once melted take your ice-cream and cut into slices and dip them in the melted chocolate and gently turn, Pop the chocolate-coated ice cream slices back on a piece of silver foil or parchment paper and return them to the freezer. Freeze until set.
