Raw Pili Nut Mole Sauce

It can’t get more Mexican than the famous mole sauce. This authentic Mole
Sauce (Mole Poblano) is made by blending sweet and earthy ingredients and
spices including dried chiles, pili nuts, sesame seeds, pumpkin seeds, raw cacao. Serve it as a main course over tacos, enchiladas and vegan burritos.

¾ cup Raw pili nuts, unsalted
7 Ancho chiles
6 Mulato Chiles
6 Pasilla Chiles
3 Chipotle chiles dried
1 Onion, small
2-3 Roma tomatoes
3 cloves Garlic
⅔ cup Raisins
⅓ cup Pumpkin seeds (pepitas)
⅓ cup Sesame seeds
1 Ripe plantain, peeled sliced
3 Whole cloves
½ cone Piloncillo
1 tbsp raw cacao
500 ml vegetable stock
1 tsp. Black peppercorns
3 tbsp Olive oil
1/2 ts salt

1. In a large pan fry onion, garlic and plantain until golden.
2. Place all ingredients in a blender, start pulsing and gradually add water to get the right sauce/paste consistency.
