This delicious & creamy pili nut vanilla & passion-fruit magnum recipe was shared by Evelyn Rose who often creates vegan keto recipes using our pili nuts. Perfect for a hot sunny day.
INGREDIENTS:
- Pili nuts: 1 packet original flavour
- coconut cream: 2 cups
- Vanilla vegan keto protein: 1/4 cup
- Vanilla: 1 whole pod, scraped OR 1 Tsp bean paste
- Monkfruit sweetener: 4 scoops / 1/8 teaspoon
- Coconut oil: 1/8 cup, melted
- Passion fruit: 3, halved with flesh scooped out
INSTRUCTIONS:
- Soak 1 packet of original pili nuts in hot water for around 30 minutes, or until soft
- Drain the pili nuts, place in a blender or food processor. Blend until smooth nut butter forms
- Add all other ingredients & blend until smooth
- Place 1 tablespoon into ice cream moulds, fill centre with passion fruit, then top and smooth off with more ice cream mixture
- Freeze for around 2 hours
