Crispy baked Mediterranean style pastries are quick & easy to prepare. They make a great snack food! They are perfect served at a gathering of family & friends or as a simple and delicious side dish at dinner.

200g Pili nut cheese (see the recipe)
Gluten free filo pastry sheets
1 kg Spinach (cooked) 1 Red onion (finely chopped) cooked together
Salt & pepper
Flax seed "egg white" mixed with lemon juice & sparkling water
Instructions:
Take two filo pastry sheets and lay on a flat surface, spread the "egg white" substitute with fingers or brush (if you have one). In a bowl combine pili nut cheese, cooked spinach & red onions. Use salt & pepper to your taste to season. Start spreading filling on the filo sheets. (refer to the video below to see how). Once spread out make a roll and spiralise into a bun shape. Do the same for the rest and once all are rolled place them into an oven to bake at 180° for 40 minutes.
